Description
More tolerant to cold than T. melanosporum. Tuber aestivum has been shown to be the same specie as T. uncinatum however they differentiate enough in terms of seasonality, appearance, and flavor to keep them separated on Truffle Board. The size and color of summer truffles is similar to that of burgundy truffles, but their gleba (“flesh”) is a paler hazel color.
Aroma/Flavor
The flavor of summer truffles is similar to that of burgundy truffles, but their hazelnut aroma is less intense.

Found in the wild throughout Europe particularly in France, Spain, Italie, England.
